"Carrots are loaded with antioxidants, and so are plump olives, a star of the healthy Mediterranean diet. If shaving the carrots lengthwise seems too laborious or difficult, you can shave or slice them into thin coins. Meaty green olives are delicious in this salad, though any olives, including oil-cured black ones, lend a pleasing briny and savory note to the mix."
