Fenugreek is an annual plant in the Fabaceae family, with leaves that consist of three small obovate to oblong leaflets. The cuboid-shaped, yellow to amber-colored seeds are commonly used in Indian subcontinent cuisine. Fenugreek is used both whole and powdered in the preparation of pickles, vegetable dishes, dal, and spice mixes such as panch phoron and sambar powder. To reduce bitterness and enhance flavor, the seeds are often roasted before use.
